INGREDIENTS
 (2 oz) 60ml choice of infused spirit
 (1oz) 30ml apple juice
 (1/4oz) 4ml sugar syrup
 (3oz) 90ml sparkling wine
TOOLS
 1x Jigger
 1x mixing glass
 1x strainer
 1x barspoon
METHOD
 Combine all ingredients (except the champagne) to a mixing glass, add lots of ice and stir for about 10 seconds. Strain in a chilled flute. Top up with champagne. Garnish with an apple fan.
